Barbecued Chicken and Black Bean Burritos3/4 lb boneless chicken breasts, about 31 small onion, about 1/2 C chopped 1 clove garlic, about 1t minced1 T olive oil1 can (15oz) black beans, drained and rinsed1/3 C barbecue sauce1/2 C shredded cheddar cheese4 large (10-inch) flour tortillas1/4 C sour creamCut the chicken into bite-size pieces.Heat oil in a large skillet over medium heat. Add chicken, onion and garlic. Season with a little salt and pepper; cook for about 8minutes or until chicken is done, stirring occasionally. Stir in the barbecue sauce andbeans. Reduce heat and stir well to coat the chicken with the sauce. Sprinkle the cheese evenlyover the top and continue to cook until the cheese melts. Warm the tortillas in a dampened papertowel in the microwave for about 45 seconds.Scoop about 1/2 C chicken mixture down the center of each tortilla; top with a dollop ofsour cream and roll up.
